It’s time to think about salad dressings! Lots of lettuces, leafy greens and sprouts will soon be filling the markets. Amazing salads await us as we move from warming meals to cooler ones. These dressings are easy, quick and packed with flavor!
Creamy Artichoke Dill
Prep time: 15 minutes
Yield: 2 cups
Ingredients
3 artichoke hearts, canned or jarred (packed in water)
1 ½ Tbsp lemon juice
1 ½ Tbsp fresh dill, roughly chopped
1 medium garlic clove, pressed
¼ cup unsweetened cashew yogurt
¼ tsp ground black pepper
¼ tsp salt
1 cup water
Instructions
Place all ingredients in a blender and blend until smooth.
Prep time: 15 minutes
Yield: 2 cups
Ingredients

1 tsp olive oil
1 medium garlic clove, pressed
1 Tbsp Balsamic vinegar
½ tsp ground black pepper
½ tsp salt
¾ cup water
Instructions
Place all ingredients in a blender and blend until smooth.
Prep time: 10 minutes
Yield: 2 cups
Ingredients
2 ½ whole roasted red peppers, canned or jarred packed in water)
1 tsp olive oil
1 medium garlic clove, pressed
1 Tbsp Balsamic vinegar
½ tsp ground black pepper
½ tsp salt
¾ cup water

Tangy Avocado Lime
Prep time: 15 minutes
Yield: 2 cups
½ medium-large avocado
2 Tbsp lime juice
¼ cup cilantro, roughly chopped
1 tsp shallots, minced
½ tsp ground black pepper
½ tsp salt
1 cup water
Instructions
Place all ingredients in a blender and blend until smooth.
Prep time: 15 minutes
Yield: 2 cups
½ medium-large avocado
2 Tbsp lime juice
¼ cup cilantro, roughly chopped
1 tsp shallots, minced
½ tsp ground black pepper
½ tsp salt
1 cup water
Instructions
Place all ingredients in a blender and blend until smooth.
Hot Tahini
Prep time: 10 minutes
Yield: 2 cups
Ingredients
¼ cup tahini paste
2 Chipotle chilies (canned), minced
1 Tbsp tamari
2 tsp maple syrup
1 ½ cup water
Instructions
Place all ingredients in a blender and blend until smooth.
This dressing is great on cold noodles too!

Yield: 2 cups
Ingredients
¼ cup tahini paste
2 Chipotle chilies (canned), minced
1 Tbsp tamari
2 tsp maple syrup
1 ½ cup water
Instructions
Place all ingredients in a blender and blend until smooth.
This dressing is great on cold noodles too!
Russianesque
Prep time: 15 minutes
Yield: 2 cups
1 cup crushed tomatoes (canned or jarred)
1 Tbsp tomato paste
¾ cups silken tofu
1 Tbsp lemon juice
1 Tbsp shallots, minced
¼ tsp cayenne
½ tsp ground black pepper
1 tsp salt
½ sweet pickles relish
Instructions
Prep time: 15 minutes
Yield: 2 cups
1 cup crushed tomatoes (canned or jarred)
1 Tbsp tomato paste
¾ cups silken tofu
1 Tbsp lemon juice
1 Tbsp shallots, minced
¼ tsp cayenne
½ tsp ground black pepper
1 tsp salt
½ sweet pickles relish
Instructions
- Place all ingredients, except the relish, in a blender and blend until smooth.
- Remove dressing from blender, add relish and mix in.
